Strawberry parfait

Ingredients
- 2 cups fresh strawberries, hulled and halved
- 1½ tablespoons sugar (adjust to taste)
- 1 teaspoon lemon juice (optional, for brightness)
- 1 tablespoon unsalted butter
For the whipped cream
- 1 cup heavy cream (cold)
- 2 tablespoons powdered sugar
- ½ teaspoon pure vanilla extract
Cooking Directions
- In a skillet over medium heat, melt the butter.
- Add the strawberries and sugar. Stir to coat evenly.
- Sauté for 5–7 minutes, or until the strawberries release their juices and begin to caramelize slightly. Add lemon juice if using, then remove from heat and let cool to room temperature.
- In a chilled mixing bowl, combine the cold heavy cream, powdered sugar, and vanilla.
- Beat with a hand mixer or whisk until soft peaks form. Don’t over whip.
- In small glasses or jars spoon in a layer of whipped cream, followed by a layer of sautéed strawberries, then a layer of crushed vanilla wafers. Repeat this sequence two more times. Finish with a final layer of whipped cream and a sprinkle of fresh basil on top.
