Portuguese Seafood Stew

Ingredients
- 3 tbsp olive oil
- 1 leek, chopped
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 red pepper, cut in strips
- 2 cups white wine
- 1L chicken broth
- 1 cup tomatoes, diced
- 500g cod fillets, cut in bite-size pieces
- 250g raw shrimps, peeled and deveined
- 250g mussel, scrubbed
- 250g clams, scrubbed
- 200g chorizo sausage, cut into chunks
- 1 bay leaf
- 1/4 tsp chili flakes
Cooking Directions
- In a large pot, heat olive oil over medium heat. Add leeks and onion, cook until softened, approximately 8 minutes. Add garlic, red pepper and chorizo sausage, cook and stir for another 5 minutes.
- Add the wine, broth, canned tomatoes, bay leaf and chili flakes. Bring to a boil, reduce heat, cover and simmer for 20 minutes.
- Add the cod and cook for 2 minutes. Then add the shrimps, mussels and clams. Cook for 2 minutes, shaking pot occasionally, until shells are opened and shrimps are opaque.
