No Bake Granola Bars

Ingredients
- 1 1⁄4 cups pecan halves (5 ounces)
- 2 cups quick-cooking oats (or old-fashioned oats)
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon sea salt
- 1 cup creamy almond butter or peanut butter
- 1⁄2 cup maple syrup or honey
- 1 1⁄2 teaspoons vanilla extract
- 1⁄4 cup strawberry jam
Cooking directions
- Line a 9-inch square pan with parchment paper and set aside.
- In a medium skillet over medium heat, toast the pecans, stirring frequently until they are nice and toasted, about 4 to 7 minutes. Set aside to cool and then chop.
- Combine oats, cinnamon, and salt in a large mixing bowl.
- Blend maple syrup and vanilla with pecan butter or another nut butter.
- Mix liquid ingredients in to dry ingredients, add chopped pecans and stir.
- Pour half of the of oat mixture into the prepared baking pan. Top with strawberry jam. Crumble the remaining oat mixture over top of jam.
- Press the mixture down firmly.
- Refrigerate for at least one hour or overnight.
- Lift bars out of the pan using parchment paper and slice into bars.
