Mango Salsa

Ingredients

  • 2 ripe mangoes, peeled, pitted, and diced
  • 1 small red onion, finely diced
  • 1 roasted red pepper, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 2 limes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Cooking directions

  • Preheat your oven to 450°F (230°C). Place the red bell pepper on a baking sheet.
  • Roast in the oven for about 20-25 minutes, turning occasionally, until the skin is charred and blistered.
  • Dice the mangoes and red onion and finely chop the roasted red pepper and parsley.
  • Juice the limes.
  • In a medium bowl, combine the diced mangoes, red onion, roasted red pepper, and parsley.
  • Add the lime juice, salt, black pepper, and cumin (if using) to the bowl.
  • Drizzle the olive oil over the mixture.
  • Let the salsa sit for about 15-20 minutes to allow the flavours to meld together.
  • Serve chilled with tortilla chips, grilled chicken, fish, or as a topping for tacos.
