Mango Salsa

Ingredients
- 2 ripe mangoes, peeled, pitted, and diced
- 1 small red onion, finely diced
- 1 roasted red pepper, finely chopped
- 1/4 cup fresh parsley, chopped
- Juice of 2 limes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Cooking directions
- Preheat your oven to 450°F (230°C). Place the red bell pepper on a baking sheet.
- Roast in the oven for about 20-25 minutes, turning occasionally, until the skin is charred and blistered.
- Dice the mangoes and red onion and finely chop the roasted red pepper and parsley.
- Juice the limes.
- In a medium bowl, combine the diced mangoes, red onion, roasted red pepper, and parsley.
- Add the lime juice, salt, black pepper, and cumin (if using) to the bowl.
- Drizzle the olive oil over the mixture.
- Let the salsa sit for about 15-20 minutes to allow the flavours to meld together.
- Serve chilled with tortilla chips, grilled chicken, fish, or as a topping for tacos.
