hemp seed tabbouleh

Ingredients

  • 1 cup hemp hearts
  • 1/3 cup red onion, chopped
  • 2 green onions, chopped
  • 1 garlic clove, minced
  • 1 english cucumber, diced
  • 2 tomatoes, diced
  • 1/1 cup fresh parsley, chopped
  • 3/4 fresh mint, chopped
  • 1 lemon, juiced
  • 3 tbsp olive oil
  • salt, to taste
  • pepper, to taste

Cooking directions

  • Place chopped red onion, green onion, garlic, parsley and mint in a large bowl.
  • Add diced cucumber, tomatoes and hemp hearts.
  • Whisk together olive oil, lemon juice, salt and pepper. Pour onto salad and mix well.
  • Serve immediately or refrigerate until ready to serve.
