Dupuy Lentil Sausages
Ingredients
- 1 cup dupuy lentils
- 2 Italian sausages
- 4 cups chicken broth
- 5 tbsp olive oil
- 3 celery stalks, sliced
- 1/2 onion, minced
- 2 garlic cloves, minced
- 2 cups potatoes, diced
- 2 bay leaves
- fleur de sel and red pepper to taste
Cooking directions
- Rinse and strain lentils.
- Heat olive oil in a large pot. Sauté the onion, garlic and celery until transparent.
- Add lentils, broth, potatoes and bay leaves. Simmer for 30 minutes.
- Pierce sausages in a few places and add them to the pot. Simmer for another 30 minutes.
- Salt and pepper according to taste.
