Dupuy Lentil Sausages

ingredients

  • 1 cup dupuy lentils
  • 2 Italian sausages
  • 4 cups chicken broth
  • 5 tbsp olive oil
  • 3 celery stalks, sliced
  • 1/2 onion, minced
  • 2 garlic cloves, minced
  • 2 cups potatoes, diced
  • 2 bay leaves
  • fleur de sel and red pepper to taste

cooking directions

  • Rinse and strain lentils.
  • Heat olive oil in a large pot. Sauté the onion, garlic and celery until transparent.
  • Add lentils, broth, potatoes and bay leaves. Simmer for 30 minutes.
  • Pierce sausages in a few places and add them to the pot. Simmer for another 30 minutes.
  • Salt and pepper according to taste.
  • Enjoy
