Chicken Taquitos

Ingredients (for the dough)
- 1 White onion
- 1 Red bell pepper
- 1 Jalapeño
- 2 Cups of sour cream
- 1 Rotisserie chicken
- Shredded mozzarella cheese
- Extra virgin olive oil
- Cream cheese
- Onion powder
- Garlic powder
- Pinch of salt
- Paprika
- Soft tortillas
Cooking Directions
- Start by preparing your vegetables. Finely dice the white onion, red bell pepper, and jalapeño. (remove seeds if you want a more mild flavour)
- Shred the rotisserie chicken into bite-sized pieces. You can use both white and dark meat for a flavourful filling.
- In a large skillet, heat a bit of extra virgin olive oil over medium heat. Add the diced onion, red bell pepper, and jalapeño. Sauté them until they become soft and slightly caramelized, which should take about 5-7 minutes.
- Add the shredded chicken to the skillet with the sautéed vegetables. Season with a pinch of salt, onion powder, garlic powder, and paprika to taste. Stir to combine all the ingredients and let them cook for a few more minutes until the chicken is heated through and well-seasoned.
- Add the sour cream and stir until all is incorporated.
- Place a tortilla on a flat surface and add a portion of the mixture in the center. Roll the tortilla around the filling to create a roll, and then transfer it to a baking pan. Drizzle a bit of olive oil over the top.
- Bake in oven for 10 minutes and serve with guacamole.
