Beet Salad with Manouri Cheese
Ingredients
- 4 cooked beets, diced
- 1/2 red onion, thinly sliced
- 3 cups baby spinach or mesclun green
- 1/2 cup manouri cheese, diced
- 1/2 cup chopped walnuts
Dressing
- 1/3 cup olive oil
- 1 tbsp honey
- 2 tbsp red wine vinegar
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1/2 tsp dried oregano
Cooking directions
- In a small bowl, whisk together all the dressing ingredients and set aside.
- Add the beets and spinach or mesclun greens in a large bowl. Add the dressing and toss to coat.
- Top with the manouri cheese and the walnuts.
