Watermelon Feta Cheese Salad

Ingredients

  • 6 cups watermelon, cubed
  • 200 g (1 cup) feta cheese, crumbled
  • ½ red onion, thinly sliced
  • ½ cup fresh mint, chopped
  • ½ cup fresh basil, chopped
  • ¼ cup Kalamata olives, sliced (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp lime juice
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)

Cooking Directions

  • Cut the watermelon:
  • Cut watermelon into cubes (about 1 in).
  • Arrange on a large serving platter.

  • Assemble the salad:
  • Add the drumsticks and coat them well with the marinade.
  • Scatter feta, red onion, mint and basil over the watermelon. Add olives if desired.

  • Make the dressing:
  • Whisk together olive oil, balsamic vinegar and lime juice.

  • Season and serve:
  • Drizzle dressing just before serving.
  • Season with salt, pepper and red pepper flakes if desired.
  • Serve immediately, well chilled.
