Watermelon Feta Cheese Salad

Ingredients
- 6 cups watermelon, cubed
- 200 g (1 cup) feta cheese, crumbled
- ½ red onion, thinly sliced
- ½ cup fresh mint, chopped
- ½ cup fresh basil, chopped
- ¼ cup Kalamata olives, sliced (optional)
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp lime juice
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
Cooking Directions
- Cut the watermelon:
- Cut watermelon into cubes (about 1 in).
- Arrange on a large serving platter.
- Assemble the salad:
- Add the drumsticks and coat them well with the marinade.
- Scatter feta, red onion, mint and basil over the watermelon. Add olives if desired.
- Make the dressing:
- Whisk together olive oil, balsamic vinegar and lime juice.
- Season and serve:
- Drizzle dressing just before serving.
- Season with salt, pepper and red pepper flakes if desired.
- Serve immediately, well chilled.
