Strawberry Cheesecake

Crust
- 1 ½ cups graham crumbs
- ⅓ cup sugar
- 6 tbsp melted butter
Filling
- 24 oz (3 blocks) cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tsp vanilla
- 1 cup sour cream
Strawberry Topping
- 2 cups strawberries (fresh or thawed)
- ¼ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 1 tbsp water
Cooking Directions
- Make the crust:
- Combine crumbs, sugar, and melted butter.
- Press in springform pan.
- Bake 8 min at 325°F. Cool.
- Make the filling:
- Beat cream cheese + sugar.
- Add eggs one by one.
- Mix in vanilla + sour cream.
- Pour over crust.
- Bake:
- Bake 60-70 min at 325°F.
- Rest 1 hour in off oven, door cracked open.
- Chill minimum 4 hours.
- Make Topping:
- Heat strawberries, sugar, lemon.
- Add cornstarch slurry, simmer 2-3 min.
- Cool.
- Finish:
- Pour topping over chilled cheesecake.
- Garnish with fresh strawberries.
