Ingredients
- 1 cup quinoa, cooked according to package instructions
- 1 small cucumber, diced
- 1 cup chopped parsley
- 1/4 cup chopped mint
- 1 small red onion, chopped
- 15 oz chick peas, rinsed and drained
- 1 red pepper, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Cooking directions
- In a small bowl, whisk together the olive oil, the lime juice and the garlic.
- In a large bowl, combine the quinoa, cucumber, parsley, mint, onion, chick peas and red pepper.
- Drizzle with the dressing and season with salt and pepper. Toss until thoroughly combined.
