Ingredients

  • 1 cup quinoa, cooked according to package instructions
  • 1 small cucumber, diced
  • 1 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 small red onion, chopped
  • 15 oz chick peas, rinsed and drained
  • 1 red pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cooking directions

  • In a small bowl, whisk together the olive oil, the lime juice and the garlic.
  • In a large bowl, combine the quinoa, cucumber, parsley, mint, onion, chick peas and red pepper.
  • Drizzle with the dressing and season with salt and pepper. Toss until thoroughly combined.
