Mediterranean Pasta Salad

Ingredients
- 300 g fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives
- ½ cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
Cooking Directions
- Cook the Pasta:
- Cook the fusilli according to package directions.
- Drain and rinse under cold water.
- Let cool completely.
- Prepare the Vegetables:
- In a large bowl, combine the cherry tomatoes, cucumber, red onion and olives.
- Assemble the Salad:
- Add the cooled fusilli and feta cheese.
- Drizzle with olive oil and lemon juice.
- Serve:
- Season with salt and pepper to taste.
- Toss gently and serve chilled.
