Maple Spiced Chicken Drumsticks

Ingredients
- 10 chicken drumsticks
- 4 tbsp maple syrup
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp ground ginger (or fresh)
- 1/2 tsp mild or hot chili powder (to taste)
- 2 tbsp olive oil
- Salt & pepper
Cooking Directions
- Prepare the marinade:
- In a bowl, mix the maple syrup, soy sauce, mustard, garlic, all the spices and olive oil.
- Marinate the chicken:
- Add the drumsticks and coat them well with the marinade.
- Let marinate for at least 1 hour (ideally 3-4 hours or overnight for more flavor).
- Bake:
- Preheat the oven to 200°C (400°F)
- Place the drumsticks on a baking sheet lined with parchment paper
- Pour the remaining marinade over them
- Bake for 35-45 minutes
- Turn halfway through and baste with the juices
- Caramelized finish:
- For the last 5 minutes, switch to broil mode to get a nice caramelized glaze.
