Maple Bacon Challah French Toast

Ingredients
- 8 slices challah bread, about ¾-inch thick
- 4 large eggs
- 1 cup whole milk (or half-and-half for a creamier texture)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 2 tbsp sugar (optional)
- Pinch of salt
- Butter for cooking
Candied Maple Bacon
- 8 slices thick-cut bacon
- 3 tbsp pure maple syrup
- 2 tbsp brown sugar
- ½ tsp black pepper (optional)
Homemade Whipped Cream
- 1 cup cold heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Cooking Directions
- Preheat oven to 400°F (200°C).
- Line a baking sheet with foil and place a wire rack on top.
- In a small bowl, mix together maple syrup, brown sugar, and black pepper (if using).
- Lay bacon slices flat on the rack or foil. Brush each slice with the maple-sugar mixture on both sides.
- Bake for 18–22 minutes, flipping once halfway through, until bacon is caramelized and crispy.
- Keep an eye on it in the last few minutes to prevent burning.
- Let cool slightly. The bacon will continue to crisp as it cools.
- In a large mixing bowl, whisk together eggs, milk, vanilla, cinnamon, sugar, and salt until well combined.
- Preheat a skillet or griddle over medium heat and add a bit of butter.
- Dip each slice of challah into the egg mixture, coating both sides. Let the excess drip off before placing in the skillet.
- Cook each slice for 2–3 minutes per side, until golden brown and slightly crisp.
- Keep warm on a baking sheet in the oven while you cook the rest.
Make the French Toast
- In a chilled bowl, combine cold heavy cream, powdered sugar, and vanilla extract.
- Use a hand mixer or whisk to beat until soft peaks form (about 2–3 minutes with a mixer). Do not over whip.
- Keep chilled until ready to serve.
Whipped Cream
- Plate 2 slices of warm challah French toast.
- Top with a generous dollop of whipped cream.
- Add 2 slices of candied maple bacon on the side or crumbled on top.
- Drizzle with extra maple syrup and a sprinkle of cinnamon or powdered sugar if desired.
