Mango Shrimp Tacos

Ingredients
- 450 g shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp chili powder
- Salt and pepper, to taste
- 8 small corn or flour tortillas
Mango salsa
- 1 ripe mango diced
- ½ red onion diced
- 1 jalapeño seeded and chopped
- ¼ cup fresh cilantro
- 2 tbsp lime juice
- salt
- 1 avocado, sliced
- ½ cup sour cream or Greek yogurt
- Lime wedges, for serving
Cooking Directions
- Make the mango salsa:
- Combine diced mango, red onion, jalapeño, cilantro, lime juice and salt.
- Refrigerate while preparing the shrimp.
- Season the shrimp:
- Toss shrimp with olive oil, cumin, paprika, chili powder, salt and pepper.
- Cook the shrimp:
- Heat a skillet over high heat.
- Cook shrimp 2-3 minutes per side until pink and slightly charred.
- Warm the tortillas:
- Heat tortillas in a dry pan for 30 seconds per side, or directly over a gas flame.
- Build the tacos:
- Top each tortilla with shrimp, mango salsa, avocado slices and a drizzle of sour cream.
- Serve with lime wedges.
