Dirty Martini Pasta Salad

Ingredients
- ½ lb pasta (e.g., mafaldine, fusilli, radiatori etc)
- 4 oz marinated feta cheese (or substitute with blue cheese or goat cheese)
- 4 oz pitted Castelvetrano olives, halved
- ⅓ cup extra virgin olive oil (EVOO)
- ¼ cup olive brine (from the olive jar)
- Zest of ½ lemon
Cooking Directions
- Bring a large pot of salted water to a boil. Cook the pasta until al dente. Transfer to a large mixing bowl.
- In a small bowl or jar, whisk together the olive oil, olive brine, and lemon zest. This creates a briny, citrusy vinaigrette that mimics the flavor of a dirty martini.
- Add the halved olives and marinated feta to the cooled pasta.
- Pour the dressing over the top and toss gently to coat everything evenly.
- Season with freshly cracked black pepper.
- Let the salad sit in the fridge for at least 30 minutes before serving.
