Beef and Broccoli Noodles

Ingredients
- 2 tbsp olive oil
- 1 red onion, sliced
- 1 tsp freshly minced garlic
- 1 lb 2 oz minced ground beef
- 2 cups broccoli florets
- 1¾ cups water
- 7 oz thin egg noodles
- 2 tbsp tamari or soy sauce
- 1 tsp sesame seeds
- 1 spring onion (scallion), finely sliced
- Chili oil, to serve (optional)
Sauce
- 1 tbsp dark soy sauce
- ¼ cup hoisin sauce
- 1 tbsp mirin
Cooking Directions
- In a small bowl, mix together all the sauce ingredients. Set aside for later.
- Heat the olive oil in a large, frying pan or wok over medium–high heat. Add the sliced onion and minced garlic. Stir for about 30 seconds until fragrant and softened slightly.
- Add the beef to the pan. Cook for 3–4 minutes, stirring and breaking it up until nicely browned.
- Pour in the prepared sauce and stir through the beef. Cook for 1–2 minutes until the sauce reduces slightly and starts to caramelize.
- Add the broccoli florets to the pan, cover with a lid, and let them steam for 1–2 minutes until just tender.
- Pour in 1½ cups of water and place the uncooked noodles spread out in the pan. Cover and let cook for 1 minute.
- Using tongs, gently toss the noodles with the beef and broccoli until well mixed.
- Plate up and garnish with sliced spring onions and sesame seeds. For extra heat, drizzle with chili oil if desired.
