hemp seed tabbouleh
Ingredients
- 1 cup hemp hearts
- 1/3 cup red onion, chopped
- 2 green onions, chopped
- 1 garlic clove, minced
- 1 english cucumber, diced
- 2 tomatoes, diced
- 1/1 cup fresh parsley, chopped
- 3/4 fresh mint, chopped
- 1 lemon, juiced
- 3 tbsp olive oil
- salt, to taste
- pepper, to taste
Cooking directions
- Place chopped red onion, green onion, garlic, parsley and mint in a large bowl.
- Add diced cucumber, tomatoes and hemp hearts.
- Whisk together olive oil, lemon juice, salt and pepper. Pour onto salad and mix well.
- Serve immediately or refrigerate until ready to serve.
