Spaghetti Sauce

Ingredients

Sauce:
- ½ Cup Greek Olive Oil
- ½ Pound Onions
- 5 Cloves of Garlic (Slivered)
- 156ml Can Tomato Paste
- 1 tsp Sugar
- 1 tsp Honey
- 1 tsp Oregano
- ½ tsp Salt
- ⅛ tsp Pepper
- 5 Fresh Basil Leaves
- 1 Bay Leaf

Pasta
- 5 Litres Water
- ¾ pound Linguini
- 3 tbsp Sea Salt
Directions
- Chop the onions
- Add the oil and chopped onions and sauté for about 9-10 minutes. (Note: Do not preheat the oil because it has a low smoking point)
- Mash the garlic and set aside
- Seasoned with some of the salt and pepper
- Add the garlic and sauté for a minute more
- Add the oregano and sauté for a minute more
- Add the tomato sauce, tomato paste, sugar and remaining salt and pepper
- Lower the heat to low and continue simmering (Note: From this point, make sure you stir every couple of minutes to prevent the sauce from sticking to the bottom of the pot.
- After about 20 minutes of simmering add the honey and continue simmering
- Chop the fresh basil and add it to the sauce
- If you want more flavour from the bay leaf, add it at the very beginning, along with the oregano
- The sauce is ready at this point
- Boil water, once it begins to boil, add the salt (Note: Taste the water for saltiness)
- Add some olive oil to prevent the pasta from sticking (once water is drained off)
- Break the pasta in half and gradually place them in the water
- Stir the pasta at the very beginning for about a minute or so
- After about 15 minutes the pasta is ready
