Spaghetti Sauce

Ingredients

    Sauce:
  • ½ Cup Greek Olive Oil
  • ½ Pound Onions
  • 5 Cloves of Garlic (Slivered)
  • 156ml Can Tomato Paste
  • 1 tsp Sugar
  • 1 tsp Honey
  • 1 tsp Oregano
  • ½ tsp Salt
  • ⅛ tsp Pepper
  • 5 Fresh Basil Leaves
  • 1 Bay Leaf
    Pasta
  • 5 Litres Water
  • ¾ pound Linguini
  • 3 tbsp Sea Salt

Directions

  • Chop the onions
  • Add the oil and chopped onions and sauté for about 9-10 minutes. (Note: Do not preheat the oil because it has a low smoking point)
  • Mash the garlic and set aside
  • Seasoned with some of the salt and pepper
  • Add the garlic and sauté for a minute more
  • Add the oregano and sauté for a minute more
  • Add the tomato sauce, tomato paste, sugar and remaining salt and pepper
  • Lower the heat to low and continue simmering (Note: From this point, make sure you stir every couple of minutes to prevent the sauce from sticking to the bottom of the pot.
  • After about 20 minutes of simmering add the honey and continue simmering
  • Chop the fresh basil and add it to the sauce
  • If you want more flavour from the bay leaf, add it at the very beginning, along with the oregano
  • The sauce is ready at this point
  • Boil water, once it begins to boil, add the salt (Note: Taste the water for saltiness)
  • Add some olive oil to prevent the pasta from sticking (once water is drained off)
  • Break the pasta in half and gradually place them in the water
  • Stir the pasta at the very beginning for about a minute or so
  • After about 15 minutes the pasta is ready
  • Enjoy
